Each month, Carafe features both a Red and a White six week wine at $10.00 OFF each 23 Litre batch.
FEBRUARY 2011
Pinot Noir - A medium bodied red wine with plenty of fruit and a deep, complex aroma. Excellent with hard cheeses or served slightly chilled with chicken, duck or game.
Riesling Auslese - An intensely flavoured, slightly off-dry German white with luscious flavours of green apple, peaches and tropical fruits. Great with spicy dishes.
MARCH 2011
Cabernet/Shiraz - This blend marries the firm flavour of Cabernet Sauvignon with the robust qualities of shiraz, creating a lush, full-bodied red wine with a light oaky nose
Viognier - With fresh aromas of apricot, mango and spiced pear. Viognier is an excellent choice of white wine to accompany Asian dishes, chicken or pork.

Cellarcraft 5-week
Amarone - A full flavoured and hearty red wine with an earthy aroma backed by notes of spice and vanilla. Great with game, sticky ribs, rich pasta or blue cheese.
Pinot Grigio - This highly popular white wine has a refreshing citrus character with a back note of juicy peach. Serve lightly chilled as an aperitif or with chicken and your favourite fish.

January 2011 (White Wine): Piazza
(Italy - Chardonnay Garganega) Enjoy this full bodied white wine - a white Amarone style experience! Piazza promised to have notes of tropical fruit, peach and a touch of minerality on the nose, followed by a hint of raisins and elderflower.
January 2011 (Red Wine): Toro
(Spain - Tempranillo Grenache) This wine is an intense red characterized by cigar box and dark fruit on the nose, finishing with dates, prunes and cherry on the palate. A touch of toasted oak completes the experience. Ole!
February 2011: Trek
(Chile - Melbec Syrah Cabernet Sauvignon Merlot) With flavours of dark roasted coffee, chocolate and blackberries, this wine balances the best of four classic varietals. Fermentation on Cabernet and Merlot grape skins and French oak completes this monumental taste adventure.
March 2011: Hang Ten
(California-Syrah Zinfandel Barbera) Intense fruit flavours of dried fruits such as dates are balanced by smooth chocolate and hints of vanilla. Your experience is enhanced with fermentation on Hungarian oak cubes and Shiraz grape skins.
April 2011: Tango
(Pinot Grigio, Chardonnay, Torrontes) A perfectly balanced expression of style, notes of apricot and apple with a hint of spice dance on your palate. Graced lightly with toasted oak, this wine has a dramatic flair that will have you and your partner reaching for another glass.

Jan 2011: Grenache Quartet - sold out!
(France, Spain, Australia, California) A Grenache blend from 4 different Countries and 3 different Continents! The finished wine is bursting with aromas and flavours suggestive of fully ripe cherries, raspberries and plums. The 2 stage oaking process beautifully counterbalances and holds all the fruit in check with it's contribution of vanilla and toast.
Feb 2011: Chateau Du Pays - Reserve Cuvee
Syrah and Grenache create the main structure of this fine dinner wine providing vibrant notes of red and black fruit plus an enticing spice note.
March 2011: Marsanne-Viognier-Roussanne
Co-fermentation of these featured varietals creates a wine that shows pear, melon, peach, delicate spice and an over-riding floral impression. All of this is wrapped within a lush, almost creamy texture with just enough acidity to vividly define the lengthy dry finish.
April 2011: Carmenere-Cabernet (Chile)
This wine shows a typical Carmenere profile of blackberry, black cherry, tropical fruit and spice inter-laced with black current and more red fruits from the Cabernet. Ageing develops further notes of coffee, mocha and leather.

A little left over?
Do you sometimes have a bit of wine left over in a bottle that is not enough to worry about preserving? Simply pour the wine into an ice cube tray and put in your freezer. Use the cubes to add to your special sauces.
Stay warm this winter, serving Hot Spiced Wine! Whether it is a follow up to an outdoor adventure or just to relax with friends on a wintry Ontario evening, this traditional blend with soothe the soul.
In a large pot, combine:
1/2 cup water
1/2 cup sugar
3 sticks cinnamon
1 tbsp cardamom seeds
a peel of 1 orange and 1 lemon
Simmer until reduced to a syrup. Add 2 - 750 ml bottles of your favourite red wine. Let simmer (do not boil) until nice and hot. Strain and serve in mugs garnished with a cinnamon stick.
